Churros are a world-famous fried dough pastry that is said to have originated in Spain at the end of the Middle Ages. However, their exact origin is somewhat debated. It is widely believed that churro may actually have its origins in China where Portuguese merchants first tasted “youtiao” — “oil-fried stick” — a golden-fried salty delicacy. The Portuguese then recreated this treat back home and added sugar. In neighboring Spain, shepherds would fry strips of dough and coat them in sugar to give them an easily portable snack during their long journeys in the mountains. Churros gained popularity in Spain and became a common street food, often sold by street vendors and at fairs and festivals. They were typically enjoyed with a cup of thick, rich hot chocolate perfect for dipping the crispy churros.

Fried dough is almost ubiquitous. In Spain and Portugal, people munch on churros – long, golden-brown knots, curls or strips of deep-fried dough, which they dip in chocolate. In China there’s something similar – fried dough sticks called youtiao, which can be eaten with congee or sandwiched in flaky pan-fried bread. It’s been suggested that churros came from China via the first Portuguese visitors to its shores in the 1500s. Other scholars believe that youtiao and churros are indeed distant cousins, with one likely common progenitor: the Islamic zulabiya. Deep-fried dough sticks, or youtiao, are a famous traditional snack in China. In some parts of Mexico they say they are the creators of them, but I think we mastered a recipe originating in China. While living in Hong Kong I’ve seen the Chinese ‘churros’ and basically it is the same concept but I think older.

Churros are largely believed to be a gift that the world can thank Spain for. But are churros truly Spanish? Some believe that churros originated in Spain, whereas others find that a similar dish has been eaten in China for much longer, crediting Chinese and Portuguese traders for their popularity. Churros are widely believed to be of Spanish origin, and that may very well be true. Other experts, however, believe that churro is nothing but a version of a popular Chinese snack that's evolved through the years. Food historian Michael Krondl tells BBC that the churro is a syringe fritter — a type of fried food that's passed through some type of gadget that gives it its shape — and such fritters have been around in Europe since the 16th century. Recipes from the 12th century even indicate that a fried food akin to a churro existed during Moorish Spain, whereas mentions of a churro-like food in 8th and 9th-century Arab texts imply that the fried food could have Arabic roots as well. Food historian Michael Krondl, however, isn't so convinced and finds the theory that Spain got its churro from China "laughable."
