Don't attempt any crazy heights, it's best to hold the churro maker just a few inches away from the oil to avoid getting burned by splashing oil. Don't throw away your empty oil container just yet. Pouring hot oil down your kitchen sink can actually damage your pipes. If you’re noticing your churros are burnt on the outside and undercooked on the inside, turn down the temperature. If they’re coming out greasy and oil-logged, turn up the temperature. Don't let your churros cool down completely; for the cinnamon sugar to stick to your churros they have to be still warm and slightly oily.

Don't let the churros get too cool before rolling them in the cinnamon/sugar mix. If you don't have a piping bag, you can use a thick zip lock bag. You can add 4 to 5 of these at a time without it overcrowding. Don't overload the pot with too many churros at one time. Don't leave out the eggs, and use 2 Tbsp of vegetable oil instead of the butter, unless you are looking for a more authentic Spanish Churro.

Don't underestimate the point of mixing and kneading. If we do not get a homogeneous mass, the churros will be deformed with the frying and, but still, they will explode in the oil. We fill the churrera with it, pressing well so that there are no air bubbles inside, otherwise our churros will explode when frying and we will end up putting the kitchen in a cisco, with oil and dough everywhere. Not to mention the danger we run ourselves of getting burned. Do not skimp when it comes to filling the pan well, the churros have to float in it. So that the oil stays hot, we do not fill the pan with churros so that we finish as soon as possible. With this we only get to lower the temperature and absorb too much oil. If we save our churros they will be equally delicious, that’s for sure, but the star shape will come out weird and they won’t look as nice as they should.

If it gets too hot, turn off the heat and let the temperature drop down to that range. Keep the oil temperature consistently between 350 and 375 degrees F (175 and 190 degrees C) as you fry.
