Churros are best served warm right after you make them. If you can’t eat them right away, let them cool completely and store them at room temperature loosely covered with plastic wrap and do your best to eat them within a day of making them. We pop them back in the microwave for a few seconds to warm them up. They may not be as crispy but they are still super tasty. Churros are very easy to make. Remove from oil and allow to drain on a wire rack briefly. Toss the hot churros in the cinnamon sugar mixture to coat completely. Return to wire rack to cool just a bit more before enjoying while still warm.

To keep churros fresh and crispy, store the completely cooled churros in an airtight container lined with paper towels at room temperature for up to two days. Keep the oil temperature consistently between 350 and 375 degrees F as you fry. If it gets too hot, turn off the heat and let the temperature drop down to that range. Fry the strips in hot oil until they're golden. Drain the churros, then roll in cinnamon-sugar.
