Pistachio eclairs son un postre que se puede hacer en varias etapas. Start by making the custard filling. Heat the milk with the pistachio paste. Whisk the egg yolks in a separate bowl with the sugar, flour and cornflour until smooth. The pistachio custard can be made up to two days in advance and kept in an airtight container in the fridge. To serve, cut the choux pastry in half horizontally and fill with blobs of the pistachio custard. Using a fine sieve, liberally dust the tops with icing sugar and sprinkle with stem ginger and chopped pistachios just before serving. You can find pistachio paste online, or alternatively use pistachio butter, available from health food shops or online. Recipe from Good Food magazine, January 2017

The Pistachio Eclair celebrates the pistachio with all its flavors. Intense and gourmand, the flavor of nuts is present all during the degustation in order not to lose its intensity. Instead of the traditional infusion in the cream, it is the almond-pistachio praliné that gives the intense flavor of roasted pistachios in the pastry cream. Decorations also play a key role in the degustation. It is the gentle notes of pistachio paste that add flavor to the ivory chocolate glaze. Lastly the morsels of chopped pistachios, set by hand on the éclair, remind us of the crunchiness of the nuts. Silky smooth choux pastry filled with pastry cream with pistachio praliné, ivory chocolate glaze with pistachio paste and decorated with chopped pistachios.

What makes these pistachio eclairs fantastic is a secret ingredient. I prepared my usual pastry cream and whisked in a whole jar of Bronte pistacchio cream. I don’t know how, but it is as if someone roasted a ton of pistachios and magically trapped the smell inside this tiny jar. I stuffed the eclairs with this fantastic mixture and glazed them with a sticky chocolate ganache. PISTACHIO ECLAIRS To prepare the pistachio pastry cream, fill a large bowl with ice cubes and cold water and set aside. Whisking constantly, drizzle one quarter of the hot milk over the yolks. Put the pan over medium heat and whisking vigorously, bring the mixture to a boil. Keep at the boil until thick, for 1-2 minutes, then take off heat and whisk in the pistachio cream.
